Baking
Victoria Sandwich
6oz (170g) self-raising flour, 6oz (170g) butter, 3 eggs, 6oz (170g) caster sugar, pinch salt.
Cream butter and sugar, add eggs, fold in flour and salt. Cook in two prepared 7 inch (17.5cm) sandwich tins at 175 oC, mark 3 for 20-25 minutes. Cool on wire rack, sandwich with jam and dredge top with caster sugar.
Family Fruit Cake
5oz(142g) plain flour,5oz(142g) self-raising flour, 8oz(225g) butter, 8oz(225g) soft brown sugar, grated rind of 1 orange, 5 eggs, 4oz(125g) mixed peel finely chopped, 1lb(450g) mixed fruit, 4oz(125g) glace cherries, 1 tbsp black treacle.
Grease and line 8 inch tin with greaseproof paper. Sieve the flours together, cream butter and sugar and orange rind until pale and creamy, add eggs. Fold in flour alternately with dried fruit, peel and cherries, finally blend in the treacle. Cook in prepared tin at 150 oC, Gas mark 2 for 2 ½`hours or until skewer inserted in centre comes out clean.
Sticky Gingerbread.
8oz(225g) Self-raising flour, 1 tsp bicarbonate of soda,1tbsp ground ginger, 1tsp ground cinnamon, 1tsp mixed spice, 4oz(115g) unsalted butter chilled and diced, 4oz(115g) black treacle, 4oz(115g) golden syrup, 4oz(115g) dark muscovado sugar, 275ml(275g) milk, 1 medium egg beaten. A 2lb(900g) loaf tin about 26cm X 13.7cm greased and lined.
Heat oven 180oC, Gas mark 4. Sift flour, bicarbonate of soda, ginger, cinnamon, and mixed spice together in a bowl, add diced butter and rub into the flour. Spoon treacle and golden syrup into a small saucepan and warm gently until melted and runny but not hot, set aside until lukewarm. Put sugar and milk in separate pan and heat gently stirring well to dissolve sugar, leave to cool until lukewarm. Then whisk milk into flour mixture quickly followed by treacle mixture and egg to make a smooth thick batter.
Put mixture in prepared tin, bake in oven for approximately 45 minutes or until a skewer inserted in centre comes out clean. Run knife round tin to loosen cake, place tin on wire rack and leave gingerbread to cool completely before turning out. Wrap in foil and leave for at least a day before cutting.
